1998The first fire
Afridi INN lights its coals in Karachi and brings Shinwari karahi down from the frontier — the city's first.
Karachi · Since 1998
The pioneers of
Mutton, lamb fat, tomatoes, chillies, salt and pepper on an open flame. Afridi INN brought the frontier's karahi to Karachi 28 years ago — and the coals haven't gone out since.

The Shinwari way · شنواری طریقہ
The Shinwari tribe of Landi Kotal cooked karahi for travellers on the Khyber Pass. No onion, no yogurt, no masala box — the lamb and its own fat do the talking. That's the karahi Afridi INN brought to Karachi in 1998.

01
مٹن
Mutton
Fresh-cut, bone-in. Never frozen, never marinated — it goes in as it comes off the bone.
02
چربی
Lamb fat
Dumba fat melted first. This is where the flavour lives — not in a spice box.
03
ٹماٹر
Tomatoes
Halved and pressed in whole, skins pulled out by hand once they give up.
04
ہری مرچ
Green chillies
Split long, thrown in late. Heat you can see coming.
05
نمک
Salt
Rock salt only, the frontier way. Measured by the cook's palm, not a spoon.
06
کالی مرچ
Black pepper
Crushed coarse over the top as it leaves the fire. Then straight to your takht.
No onions. No yogurt. No shortcuts.

Tell us who's coming. We'll work out how many kilos of karahi, how many seekhs and how much kahwa — the way the waiter would.

Branch no. 4 · Port Grand
In 2018 the family opened its fourth branch on the old Native Jetty Bridge. Lanterns on the steel roof, takhts and gaav-takiye along the rail, the port's cranes across the water — and the same karahi from 1998 on the coals behind you.
